Ingredients (Serves 3 to 4)

- Sona masoori / Basmati rice – 1 Cup
- Onion – 1, sliced thin
- Tomato – 3 medium, finely chopped
- Ginger garlic paste – 1 tsp
- Green chillies – 3, slit
- Turmeric powder – 1/4 tsp
- Sambar powder – 1.5 tbsp
- Salt – as needed
- Oil / butter – 1.5 tbsp
- Bay leaf – 1
- Cinnamon – 1 inch
- Cardamom – 2
- Cloves – 3
- Jeera – 1/2 tsp
Steps
- Wash and soak rice for atleast 10 mins.
- In a pan, add oil / ghee, bay leaf , cinnamon, cloves and cardamom. Add jeera and allow it to splutter.
- Add green chillies and fry.
- Add ginger garlic paste and fry for a min till the raw smell goes off.
- Add onion and fry till transparent.
- Add finely chopped tomatoes, salt and fry till they run mushy.
- Add turmeric powder, sambar powder and sauté well till the oil separates.
- Add 1.5 cups water if using basmati rice and allow it to boil. Check for salt.
- Drain water from the soaked rice and add the rice to the pan when the water boils.
- Simmer and cook closed for 12 – 15 mins.
- Switch off the flame and garnish with more coriander leaves.
- You can use coriander powder, chilli powder instead of sambar powder.
