Atho is one of the most popular dish in Burmese cuisine, also a popular street food in India. It is a combination of different textured ingredients. Atho is prepared by mixing plain noodles with vegetables and soup.
The deep fried onions and garlic along with the peanut and fried gram powder enhances the flavor of the dish.
Ingredients (Serves 4)

- Noodles – 200 gms
- Onion – 2 medium, sliced
- Garlic – 10 cloves, sliced
- Peanuts – 2 tbsp
- Fried gram / Pottukadalai – 2 tbsp
- Coriander leaves – a bunch
- Orange food color – a pinch
- Carrot – 1 small, sliced thin
- Cabbage – 1/2 small, sliced thin
- Tamarind – 1 tbsp
- Red chilli powder – a pinch
- Red chilli flakes – to garnish
- Thattai / Deep fried crackers – 3 to 4
- Lemon juice – 2 tbsp
- Banana Stem soup – 1/2 cup
- Salt – As required

- Boil water and add salt and a pinch of food color.
- Add the noodles and cook them till done.
- Transfer to a strainer and run in cold water.
- Add some oil and toss them. Cool down the noodles.
- Deep fry onions till brown and keep them aside.
- Deep fry garlic till brown and keep them aside.
- To prepare the garlic oil topping, mix 2 tbsp of the deep fried oil with few slices of the deep fried garlic and a pinch of red chilli powder. Keep them aside.
- Dry roast peanuts and powder them.
- Powder the fried gram.
- Soak tamarind in hot water and extract the juice.
- Add salt in plain water and keep it ready.
- Take the noodles in a large bowl and add vegetables, fried onions, fried garlic, peanut powder, fried gram powder, garlic oil topping, Banana stem soup, coriander leaves, tamarind water, salt water, lemon juice and toss them well.
- Garnish with the crushed crackers, red chilli flakes, fried onions and garlic and coriander leaves.
